Tracking

I’ve been awful at tracking lately, but yesterday was a  pretty typical good day for me, as far as amount of food consumed. (Fortunately, which has been a lot lately!)

So before I went to bed, I just wrote down everything that I ate during the day so I could track it when I got to a computer at work today. 

After doing this (for time sake) I just took the net calories, fat, & fiber intake and input it into the weight watchers calculator. It gave me 28 Points, which is right on for my (new!) daily point intake!

I know it’s not a totally accurate translation, but it’s way faster and accurate enough at this point.

This is an atypical breakfast, actually. I was on the road from N’s house back downtown so I could walk to the WW mtg. I usually eat something higher in protein or fiber, like bagel thins + peanut butter, eggs (or egg beater whites) scrambled with veggies, oatmeal, or something like that.

And I’m pretty good about not eating out, I haven’t had Tokyo Joe’s in forever (and it’s on the first floor of my building!). I’m glad to say I was completely comfortable in leaving a bunch of rice in my bowl (it was probably about 1/3 cup, which makes me wonder how much they put into start!)

PS: My fajita dinner was huge & filling & delicious!

I’ve been seriously slacking on posting, so here’s a bunch of food I’ve made lately… I’m not cooking as much as I’d like, but it’s a sampling of what I have made.

The quiche was pretty fun and lasted me a long time. I definitely put way too many veggies in (spinach, onion, tomatoes, asparagus, and I don’t even remember what else) but the egg mixture totally overflowed!

Next time I’m just going to omit the crust, it tasted too buttery and was the highest caloric contributor to the meal.

For some unknown reason I’ve been nervous to actually cook with sweet potatoes, even though I’ve had them in my kitchen.
So post C25k Week 1/Day 3, I was starving and prepped this little dinner. It was already late, so I didn’t want to eat too much, but I was super hungry!

My weekend in food (I didn’t get a picture of my burger & huge-ass salad last night), just thought I’d sum it all up in one.

The lemon-broccoli with the boca creation was so less than desirable. The recipe called for Panko but I just had little italian bread crumbs and assumed it’d be the same thing. It just turned out mushy and not very good. 

My meals on Saturday were fantastic creations, both with whole wheat spaghetti, but new and yummy things that I’m excited to make again. Just so many seasonings and flavors that came together so well. Pretty easy to make and off the WW website!

(And just for measure, this was my view leaving work on Friday, and then I wore a skirt on Sunday and the majority of the snow was gone!

Made sooo much! So it’s divided into 3 portions. One for now (just finished); one for later; and one for after that.

I went to bed last night without making a sandwich for today and I just don’t like doing it in the morning… And I usually forget in my sleepy haze when I’m getting ready for work!

I’ve been able to make dinner at home lately, a little more than I have in the past couple months, forcing me to get a little more creative!

I got a little mediterranean-inspiration for this when I found artichokes to add to chicken and feta cheese. But with a plethora of veggies & a touch of balsamic, the only Point value foods were my 3oz of chicken & 1/8 cup feta cheese!

Thanks for the responses on the Boca Burger! I saw it when I was at the grocery store and decided why not?
Totally unsure of what to do with it, I threw some grilled onions in the saucepan and then some tomatoes. And no idea what sort of sauce to use, and I saw some BBQ.
I tossed some avocado to complete the onion, tomato relish and put the burger on a bed of lettuce on the orowheat thins.
And it was *so good*. I was amazed. I’m not sure how much the Boca burger had to do with, but it provided the substance and for 1 Point?? But seriously, so good!

New things for dinner! I bought some pork a little while ago and it’s been sitting in my freezer since I didn’t know what to do with it.
Last night I grilled it (George Foreman style!) with garlic, soy sauce, onions, & ginger. And I served it with a pile of mixed veggies.
How do you season & serve pork?

I picked this up on previous grocery trip as something to leave in my desk for that day when I forget to bring lunch and don’t need to spend $8 on a sandwich or something out.

Review :: Meh. Not very good, the rice cooked kind of funny. Seasoned well enough. But I’m still hungry… maybe time for an apple? It’s good for what I want it to be; it keeps (room temp, doesn’t need to be kept frozen) and it’s something for lunch. But not something I’d look forward to.

Anyone else tried this or another variety?
